I have been curled up on the couch sick for the last couple days. It’s been kind of awful. Monday I was barely conscious for more than a few hours (for The Bachelorette, TBH). I knew that if I had any chance of making it to work tomorrow, there was no way I could sleep all afternoon, no matter how much I wanted to. Que the random baking. I decided, since I had a few extremely ripe bananas on the counter, to make banana bread and share the recipe on the blog!
There’s nothing better than a good banana bread (unless its zucchini bread) and while I can’t promise it will cure any illness you have, it did make me feel a little bit better. Maybe it’s the fact that I actually got off of the couch and did something or maybe it’s just the warm, mushy and sweet texture that makes banana bread oh so delicious. The best part about banana bread is how easy it is to make! Seriously, you throw a few ingredients in a bowl, stuff you probably already have in the pantry and fridge, and stir a couple times, pop it in the oven and you’ve got a delicious snack (and breakfast in the morning).
